YEAH for sunny Sundays!
And being warm enough to eat lunch in the park! [Tofu banh mi from a place in Downtown Kitchener]
A quiet little spot
Now for some kitchen snaps…
Easy meal of fusili with cheesy sauce, edamame, and carrots:
With a side of ELLE Canada…fashion mags are a guilty pleasure of mne
To make:
Boil 1 1/2 c fusili pasta, 2 small, diced carrots, and 1/2 c frozen edamame for ~10 min or until pasta is al dente
Drain in a colander and set aside
In a saucepan, combine about 1/2 c almond milk, 1/4 c nutritional yeast, a few heaping tablespoons of hummus and/or tahini, and salt & pepper
Whisk until smooth
Pour pasta and veggies back into saucepan and heat through
Mangez!
[Serves 2 or 3]
Sunday means GREASY BREAKFAST [not that greasy when you make it at home but still good for a mildly hungover state]
Eggs, toast, and avocado. Trinity of goodness.
Plus a little kiwi action!
Speaking of kiwis, MUSICAL SEGUE: The Naked and Famous, a super cute rock band from New Zealand, have been dominating my workout playlists…
You’ve probably heard a couple of their songs already as they were featured on a bunch of television series, but have a listen anyway-
