Sunday = pancakes for breakfast, as long as I have time and ingredients!
These were actually my favourite that I’ve made recently.
Banana walnut oat bran is a delightful combination.
La recette, based on one from In Praise of Leftovers:
**Makes about 9 smallish pancakes or 2 servings**
1/2 c. all-purpose flour
1/4 c. oat bran
pinch salt
pinch cinnamon
1 1/2 tsp baking powder
1/8 tsp baking soda
1 egg
1/4 tsp vanilla extract
3/4 c. buttermilk (I juiced half a lemon and added it to almond milk as a substitute)
1 tsp agave
1/2 large, ripe banana, mashed
Walnut pieces, to sprinkle on top
Heat up a griddle or non-stick frying pan on medium heat.
Combine dry ingredients in medium bowl. Whisk eggs, vanilla, buttermilk, and agave together in a small bowl.
Add buttermilk mixture and mashed banana to dry ingredients, stirring just until blended. Drop 1/4 cupfuls onto hot griddle, sprinkle a few walnuts pieces on top, and flip after bubbles have formed (I cooked them for about 2 min on each side).
Let cool a bit and top with maple syrup and extra sliced banana!
Grand, just grand.
Another sun-dappled breakfast from this week:
Fried egg and avocado on toast, with some raspberries and kefir. I was hungry.
I had a serious hankering for a pad Thai-esque dish so I attempted to make rice noodles with tofu, veggies, and peanut sauce…
NOT the prettiest, but it tasted great!
So much leftover!
I will have to try this out again and make it more aesthetically-appealing, somehow! On the plus side, I got to eat with chopsticks, which I enjoy immensely.

Long walks are another Sunday necessity – winter has returned but it’s still nice to get some fresh air and sunshine. One week left until cross-country skiing in Quebec! J’ai hâte d’y aller!

Aaaah! It’s been so long since I had pancakes! I think I’ll be making pancakes soon too.
That stack of pancakes is a thing of beauty, especially with the berries! And I am all over that egg and avocado on toast, YUM.
