I was enlisted to help bake some cookies for my friend’s office, and I figured gingersnaps were a good autumn cookie and universally liked- hope I wasn’t mistaken! Anyway, you cannot go wrong with red sprinkles, right?

A conglomeration of monster cookies!

Recipe, slightly adapted from Joy of Baking:

3/4 c salted butter, room temp
1/2 c dark brown sugar
1/2 c granulated sugar
1/4 c unsulphured molasses
1 egg, slightly beaten
1/2 tsp pure vanilla extract
2 c all-purpose flour
1/2 tsp baking soda
Pinch of salt
1.5 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground cloves (forgot to add this!)
Coarse sugar, or sprinkles, to top

In a large bowl, beat the butter and sugars until light and fluffy. Add the molasses, egg, and vanilla extract and beat until smooth. In a separate bowl whisk together the flour, baking soda, salt, and spices. Add to the butter mixture and mix until well combined. Cover and chill the batter for about 30 minutes or until firm ( didn’t bother with this).

Preheat the oven to 350 degrees F (180 degrees C). Line two baking sheets with parchment paper (or grease lightly).

Roll dough into 1 inch (2.5 cm) balls. Place on the baking sheet, spacing about 2 inches (5 cm) apart and flatten the cookies slightly with the palm of your hand. Bake for 12 – 15 minutes or until the cookies feel dry and fairly firm on top- they will firm up more as they cool. Cool on a wire rack.

Makes about 30 cookies.

My breakfasts lately have been variations on the theme of pumpkin oatmeal – boring, perhaps, but really the perfect morning meal for days that just keep getting chillier.

Multi-grain hot cereal (1/4 c dry) with an unmeasured amount of pumpkin, 1/2 mashed banana, splash of soymilk, spoonful of chunky peanut butter, and topped with pumpkin seeds and walnuts!

And more pumpkin overnight oats made with vanilla yogurt, 1/2 banana (in chunks), 1/3 c oats, 1/4 c soymilk, several spoonfuls of pumpkin, and topped with a liberal sprinkling of cinnamon, pumpkin seeds, and dried cranberries.

Well, that’s about all I’ve got – oh Mondays, you leave me so uninspired. However, I do have a Thursday off and a Montreal weekend to look forward to, so I shouldn’t complain.

Time to watch some Gossip Girl and read Allen Ginsberg’s “Howl” – we’re going to see the film of the same name tomorrow 🙂
