Double downward dog! Such a good stretch and shoulder strengthener.

I’ve really been enjoying POWERFUL ashtanga practice – I can feel myself becoming a little stronger each week, especially in my upper body.
Tried out another muffin recipe from Vegan with a Vengeance this morning – according to my vegan friends, soy yogurt makes muffins nice and fluffy (my main problem with vegan baking is that the results tend to be a bit dry/tough).
Mocha Chip Muffins (slightly adapted from VWAV):
1 1/2 c whole wheat pastry flour
1/3 c sugar
1/4 c cocoa powder
2 1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
2 tsp instant coffee powder
1 c soy milk
1/4 c canola oil
1/4 c unsweetened applesauce
3 Tbsp vanilla soy yogurt
1 tsp vanilla agave nectar (couldn’t find extract)
1/2 c semi-sweet choc chips
Walnut halves, to top
Preheat oven to 375F. Line a twelve-muffin tin with paper liners.
In a large bowl, sift flour, sugar, cocoa powder, baking powder, cinnamon, and salt. Mix in instant coffee powder.
In another bowl, whisk soy milk, soy yogurt, oil, applesauce, and vanilla.
Pour wet ingredients into dry & mix until moistened. Fold in choc chips.
Fill muffin cups about 3/4 full. Top each muffin with a walnut half or two.
Bake 18 to 20 min.
I am still amused by George the House Cat on a daily basis. He seems to enjoy chillin’ on the shelf next to my floral jewellery box –
I dunno how he felt about modelling a UW engineering hat!
