rain rain go away!

Ay, I don’t think it’s really stopped raining since I arrived home! Oh well, gives me a good excuse to nap, cook, play piano, drink entire pots of tea, read about the history of chocolate, and so on…

Microwaved oatmeal cake for breakfast (thanks to Hungry Hungry Hippie for the recipe!)

I added about 1 Tbsp unsweetened shredded coconut and some dried cherries. Not bad!

Chilly days call for ONE-POT COOKIN’…like “Auntie Bonnie’s Lively Lentil Stew” from How It All Vegan, for which I halved and made several adjustments based on what was available in the Bradley kitch.

(Alex, if you’re reading this…OH YES! But who the f**k is Auntie Bonnie?)

The basics: 1/2 giant onion, 2 small carrots, 1 stalk celery

More veggies: butternut squash, tomatoes, yellow pepper

1/4 c each of red lentils and yellow split peas

Add some chopped baby tomatoes (recipe calls for 14-oz of diced tomatoes but we didn’t have any), 2 Tbsp tomato paste, 1.5 c vegetable broth, 1/4 tsp red pepper flakes, 1 tsp chili powder, salt n pepa.

Cook on medium-low for about 40 min. Then, add a handful of ripped baby spinach and 2 Tbsp fresh chopped parsley and cook for another 5min. All done!

Say yes to leftovers.

Our tour guide was super chill, and also Canadian.

Returning to the city centre through the Vondelpark…what an amazing piece of green space!
